If, like me you have had it with the Antwerp knip, a beautiful word for breaking open and paralysing Antwerp, but you still want to enjoy delicious gastronomic discoveries: rep you all to Atelier Maple!

Three times we industriously search for a parking meter or a sign ‘paying parking’. Hi ni menier’, says a nice ‘riverain’. That is one of the advantages of the Atelier Maple, besides its quiet location opposite the Te Boelaer Park. With a bit of luck, the Maple Leaf blows towards the front door at the beginning of autumn. That front door opens the way to a beautiful property: a magnificent old mansion that has been restored in all its class and grandeur. In the cold winter months, we’ll be cozy in here!
Today, however, we are enjoying a beautiful sunny day and the beautiful terrace is waiting for its first visitors. The chef and his very attractive partner-hostess welcome us with great panache. The young and dynamic couple has also turned this terrace into a garden of Eden. Including a fragrant herb garden which Adam is only too happy to dig into. Today, that honour falls to the chef. He prides himself on a delicious and honest product cuisine. He makes good use of local suppliers and his own herb garden.
Chef Timothy Tynes has already clocked up a lot of creditable kilometres, despite his young age (born 1987). He learned the tricks of the trade in the shadow of top chefs such as Sergio Herman and Kobe Desramaults. But he also got fed up with the city’s traffic jams and so he quit his last mission at Ga Nord


In the plate you can immediately taste the passion of the chef! The amuses are surprisingly presented. One of them comes with a mini barbecue at the table with which we can fry our satays ourselves. Wonderful. In the starter we enjoy a nice slow cooked egg with girolles. Tasteful, although we would have liked to have something savoury to go with it.



But the main dish provides fireworks in the mouth and on the plate. We eat a beautiful combination of tarbot with squid and small Spanish pasta strings (fideua). The flavours of this dish are so right that I just want to come back for this. And for the terrace, and for the premises, and for the hostess, and for Timothy. Off course ?
