A story of craftsmanship, artisanship and the search for the best wooden casks for the best end product.
The story of The Macallan takes us back to Scotland near the Spey River. It was here that Alexander Reid in 1824 founded The Macallan Distillery. It will later prove to be good land, for the name The Macallan comes from the sinuation between Magh, meaning fertile ground, and ‘Ellan‘, after the monk St Fillan. This church stood for centuries on the site of what was later to become The Macallan Distillery. Since time immemorial the surplus barley was distilled into whisky here by the River Spey. A tradition that would prove to be of golden value.


Look at the world
An equally daring and brilliant move by The Macallan was to set their sights on the world. For example, they pride themselves on selecting only the finest woods for maturing their single malt whisky. The Master Wood Maker himself chooses the trees from which oak sherry casks will be made in which the whisky will later mature. This process takes 6 years before the barrels are filled with whisky. Because of this intensive process, these barrels also cost 5 times more. But if you know that 80 percent of the taste of whiskey comes from the right choice of wooden barrels, then you quickly understand the importance of the right barrel.


The final cut
But of course it all starts with what will end up on the barrel. And it goes without saying that at The Macallan, they are extremely selective here too. Only 16 percent of the distillate is good enough as a basis for the whisky. They call it ‘the finest cut’. It is this distillate that will later provide the full and pleasant character of the whisky. To arrive at this extremely refined distillate, The Macallan use very peculiar copper stills. Not only does the shape look different, but they use almost the smallest of all the distilleries along the Spey River. That would ensure the spirit has more contact with the copper, giving it its rich flavour.


The natural colour of whisky
The distillate becomes whisky after a careful maturation in American or European oak barrels. It is from this sophisticated ageing process that the whisky will derive not only its flavour but also its colour. With The Macallan whisky, the colour of the whisky is only the result of a natural process through contact of the whisky with the barrel. The Master Whisky Maker ensures with his knowledge that there is consistency between the different bottles that are finally made of a whisky.
