Brussels recently witnessed an extraordinary gastronomic spectacle at the prestigious Comme chez Soi. The occasion? The introduction of the seventh chapter of Maison Castel’s Séries Limitées, a collection that embodies the essence of French wines, with each chapter telling a unique story about French terroirs.

The evening began in the enchanting cellars of Comme chez Soi. While enjoying a fresh Maison Castel Crémant de Bordeaux, a stunning example of Maison Castel’s craftsmanship, we were greeted by Thomas Van Muylder and Cédric Jenin. The Crémant, with its sophisticated bubbles and fresh taste, was the perfect opener for what was to be an unforgettable culinary journey.

At the “chef’s table,” overlooking the kitchen, our tasting experience began. Chef Lionel Rigolet and his team amazed us with their culinary skills. The candied leeks and mousseline of roasted cauliflower, subtly combined with broccoli bulgur and toasted walnuts, were a sensation of flavors and textures.



A sublime food item
The wines from Maison Castel were not just a complement, but an enhancement to the dishes. The Séries Limitées Chablis 1er Cru Vaillons 2021, with its subtle minerality and freshness, was an exquisite companion for the soft and creamy textures of the entrees.





The monkfish fillet paired with the Séries Limitées Condrieu 2021 was a revelation. The wine with its rich aromas of stone fruit and a hint of spice elevated the flavor of the dish to new heights.



The main course, a venison leg with a sophisticated selection of Maison Castel Séries Limitées wines, including our favorite, the 2019 Gigondas, was a true highlight. These wines, with their robust yet elegant profiles, were the perfect harmony with the game dish.






The dessert, a delicate almond cake with white miso ice cream, was accompanied by the Terrasses du Larzac 2021 and Côte-Rôtie 2021. These wines, with their subtle complexity and freshness, added an extra dimension to the sweet conclusion of our meal.

This experience at Comme chez Soi, accompanied by top chefs and sommeliers, was a celebration of the art of cooking and winemaking.
