The presentation of the R.020 was enhanced by the plant-based gastronomy of Nicolas Decloedt, owner of humus x hortense, where the cuisine is not only local and seasonal, but also celebrates every element of nature and terroir.

Parallel to the culinary spectacle, Nele Ost, Daniel Ost’s daughter and creative director, designed an exclusive bouquet. Her floral masterpiece, inspired by the vineyards of Champagne, is offered as a symbiosis of art and nature. The exclusive Lallier Réflexions bouquet by the hand of Nele Ost will be on sale from March 21 to June 20 at the three Daniel Ost branches and through the webshop danielost.be.

Lallier’s newest Brut R.020, a masterpiece by cellar master Dominique Demarville, celebrates the year 2020 with notes of mineral saltiness, perfect balance and low dosage, in keeping with Lallier’s philosophy of uniting nature and craftsmanship.
A nature pairing lunch
Lallier chose a Belgian release to honor the local connection, with Decloedt as ambassador highlighting Belgium’s natural palette in his creations, accompanied by a glass of R.020.
So at the heart of the gastronomic experience was Nicolas Decloedt’s menu, which revealed itself to be a symphony of flavors. The adventure began with an appetizer of buckwheat crackers and Belgian chickpea hummus, followed by tartelette with spring salad and pickled turnip, and a roasted risotto with fermented asparagus and yogurt. These dishes were elevated by the Champagne Lallier Blanc de Blancs Brut, whose fresh and vibrant notes accentuated the delicate spices and acidity of the aperitif.






The appetizers – a harmony of Belgian chicory, gooseberries, pumpkin seed miso, sunflower seed tofu and pakchoi – melded with the full, expressive notes of the Champagne Lallier Ouvrage Extra-Brut. The Lallier Blanc de Noirs Brut with its powerful and rich structure formed an excellent pairing with the robust flavors of the spelt focaccia and red beet ketchup.
For the main course, Decloedt served an artistic creation of Jerusalem artichoke, white wine sauce, sea vegetables and young shoots, accompanied by a borlotti bean tempeh and glossy celeriac in bisque. The paired Champagne Lallier Réflexion R.020 Brut, with its subtle minerality and complex aromas, was the perfect accompaniment that took every element of the main course to the next level.
The dessert was a masterpiece of flavor and texture, consisting of “Wholefruit chocolate,” hazelnuts and szechuan pepper ice cream. This finale was enhanced by the fine bubbles and multifaceted sensations of the Champagne, rounding off the evening with a crescendo of culinary excellence.
The signature Lallier Réflexions dish by Nicolas Decloedt – in the company of a glass of Lallier R.020 Multi-Vintage Brut – will be part of the humus x hortense menu throughout April. More info at humushortense.be
The new R.020 release
Dominique Demarville, born in the French Ardennes and raised in the vineyards, is now contributing to Lallier’s legendary heritage with his first blend as cellar master and general manager, the R.020 Multi-Vintage Brut.





The R.020 is the latest addition to Lallier’s innovative Réflexion series, which presents a new take on champagne each year, honoring the character of the individual harvest while maintaining Lallier’s signature style.
With this new release, Lallier confirms its status as a modern and respected champagne house, combining progressive craftsmanship with respect for nature and terroir.
