Chef Eric Vildgaard, from enfant terrible to star chef
Zilte introduces yet another top chef within their Exquis series ‘fourhand experiences’.
While the sophistication of their restaurants is certainly similar, you won’t find two star chefs with a greater contrast in their backgrounds. Viki Geunes of Zilte*** will soon be cooking a fourhands with Eric Vildgaard of Jordnær** from Denmark. The setting: Zilte. The dates: Sept. 14 and 15.
Under the name “Exquis,” the Zilte family invites international star chefs at different times of the year for a unique unforgettable collaboration. The harmony between different cooking styles and the energetic atmosphere in the kitchen come together to create a unique and exclusive menu. In each their style, the chefs bring their favorite products together in this menu.


Earlier this year Zilte hosted French three-star chef Arnaud Donckele, and last year a double Exquis exchange took place with Belgian three-star chef Tim Boury. Later this year, Zilte is hosting high-profile Danish chef Eric Vildgaard.
Vildgaard is a passionate chef who found his salvation in cooking after a tough childhood. Together with his wife Tina, Vildgaard built a new future completely focused on cooking. Jordnær was born.

Viki Geunes, top executive in Belgian gastronomy and chef and mastermind behind the classic three-star maison Zilte, immediately clicked with Eric Vildgaard early this year during an event in St. Moritz. Moritz, and a plan for a fourhands was born.

La Liste 1000 Best Restaurants honored Jordnær with the Hidden Gem Award, and in 2023 Jordnær was named “Restaurant of the Year” in Denmark by the Danish Dining Guide (Den Danske Spiseguide) amid an impressive, strong group of fellow nominees.
