In an idyllic green estate in Rixensart stands a stately castle-like building, which is home to Restaurant L’Amandier. Here, amidst peace and nature, we lived a harmonious experience of gastronomic art and luxurious accommodation.
The delicate cuisine of chef martin volkaerts
At L’Amandier, Martin Volkaerts, awarded “Best Young Chef of Wallonia” by Gault Millau, has been at the helm of the kitchen since 2018, having joined his father Marco in 2012. Their shared culinary vision is characterized by a refined balance of flavors and creative dishes.
Each bite was an expression of culinary mastery, with each ingredient carefully selected and each dish carefully composed. The balade d’amuse bouche was an enticing prelude to what was to come. The truite d’Ondenval, served with a refreshing espuma of yogurt with fresh herbs, brought a flavorful freshness. The green asparagus from Gentissart, delicate and tender, provided a nice bridge to the lotte, combined with sweet peas and tangy rhubarb. And the barbecue filet pur from Iberian pig was sublime, melting in the mouth with every bite.

At L’Amandier, respect for nature and sustainability is paramount. They have their own vegetable garden, from which they source fresh vegetables and herbs for their dishes. In addition, Martin’s mother, Stéphanie, is a passionate beekeeper. Her homemade honey is a sweet treat at breakfast and reinforces the restaurant’s philosophy of thinking and acting locally.

After dinner, we were invited to choose our requirements for breakfast from a list of delicious, mostly local and natural products. The attention to detail and care in this reflected the overall philosophy of the restaurant.
Our room was an oasis of peace and comfort, furnished with luxurious materials that exuded a zen atmosphere. Restaurant L’Amandier is more than a restaurant, it is a family business where they complement each other perfectly. Stéphanie, the mother, was even awarded the Gault Millau prize for “Host of the Year” in 2010. Her warmth and hospitality are the soul of this place. And at the same time, you sense a great symbiosis between the mom and Martin that takes everything to a higher level.

Both the restaurant and the overnight stay at L’Amandier were beautifully coordinated, resulting in a harmonious whole. Their commitment to sustainability, use of local and organic produce, and exceptional culinary talent made our experience at L’Amandier a sublime one.
